Listed below are some recipes that are delicious and good to take your mind off  things.

 Chocolate Chip Cookies

Ingredients:

  • 100g Unsalted butter (melted)
  • 125g Caster sugar
  • 1Egg
  • Dash of vanilla extract
  • 150g Self raising flour
  • As much chocolate chips/chunks as you like

 

Method:

1. Preheat your oven to 180C and line two baking trays.

2. Combine your butter and sugar with a wooden spoon until completely combined.

3. Add in your egg and vanilla and mix until combined again.

4. Fold in the flour until combined.

5. Add in your chocolate chips/chunks and combine in.

6. Using a teaspoon, place your cookie dough on the trays leaving plenty of space as they tend to spread a lot.

7. Place in the oven for about 10-12 mins or until golden brown.

8. Enjoy! 

Chocolate Brownies

Ingredients:

  • 275g dark chocolate
  • 275g Unsalted butter
  • 400g Caster sugar
  • 1 Teaspoon vanilla extract
  • Pinch of salt
  • 5 Eggs
  • 200g sifted flour
  • 50g Chopped milk chocolate

 

Method:

1. Heat the oven to 160C 

2. In a large bowl set over simmering water melt the dark chocolate and butter together.

3. Whisk in the sugar, vanilla, and salt.

4. Beat in the eggs one at a time until combined, fold in the flour and milk chocolate.

5. Pour into a shallow baking dish lined with baking paper.

6.Cook for about 20mins or until a skewer comes out clean with only a bit of melted chocolate left on.

7. Cut into slices and enjoy!

Muffins

Ingredients:

100g Softened butter

125g Caster sugar

2 Eggs

100ml Natural yogurt

4 Tablespoons milk

225g Plain flour

1/4 Teaspoon bread soda

Handful of raspberries

50g White chocolate chips

 

Method:

1. Preheat oven to 200C and put your muffins cases in the tin.

2. Cream the butter and sugar together until pale and creamy.

3. Add in the eggs, milk and yogurt and mix.

4. Sieve in the flour and bread soda.

5. Add in the raspberries and white chocolate.

6. Spoon into the cases evenly leaving space for the muffins to rise.

7. Place in the oven and bake for 20-25mins.

8. Take out from the oven and place on a cooling tray.

9. Enjoy!

Granola Bars

Ingredients:

250g rolled oats

100g almonds roughly chopped

75g mixed seeds

100g runny honey

125g peanut butter

100g pitted dates

100g dried mixed berries

 

Method:

  1. Preheat the oven to 180°C (350°F/Gas 4).
  2. Lightly oil a 28x18cm (11x7in) tray and add the oats, almonds, and seeds. Cook for 10-12 minutes.
  3. Warm the honey and peanut butter in a pan over a low heat. Stir occasionally, until combined.
  4. Place the dates, 4 tbsp of warm water, and the honey mixture in a food processor, and blend until smooth.
  5. Mix the date and oat mixtures in a bowl with the berries and stir until combined.
  6. Spoon into a tin and flatten with the back of a spoon. Cook for 12 minutes.
  7. Allow to cool slightly before cutting into bars

Mug Brownies

Ingredients:

2 Tablespoons plain flour

2 Tablespoons brown sugar

1 Tablespoon cocoa powder

Pinch of salt

1 Tablespoon sunflower oil

2 Tablespoons milk

1 Tablespoon chocolate chunks/chips

 

Method:

1. Mix the dry ingredients in a 200ml microwavable cup/mug.

2. Stir in the oil and milk until there are no lumps.

3. Mix in the chocolate chunks/chips.

4. Microwave on high for about 1min then let stand for 30sec.

5. Enjoy!

Apple crumble

Ingredients:

100g butter

900g Bradley apples

100g Demerara sugar

2 tbsp apple juice/water

100g plain flour

125g jumbo rolled oats

Dash of cinnamon

 

Method:

1.Preheat the oven to 180°C (350°F/Gas 4).

2.Melt 25g of butter in a pan and stir in the apples, half the sugar, and apple juice.

3. Cook for 5-6 minutes, covered, then spoon the apple mixture into a l litre ovenproof dish.

4.Place the four in a bowl and rub in the remaining sugar with your fingertips until the mixture looks like breadcrumbs.

5.Stir in the outs sugar, seeds, and cinnamon. 

6.Spoon the mixture over the top of the apples.

7.Bake for 30-40 minutes until the topping is golden.
